Now that I've been on an strict (yet easy) eating plan for the last 12 weeks, my craving for food is at a whole new level. I especially miss the creative cooking part. I find myself surfing the net for new recipes and ideas, flipping through food magazines drooling over the stuff that doesn't fall under my eating plan, its been a true test of will power and dedication. But, at the end of the day, I stick to the plan, and just wipe the drool from my face.
I wanted to make something a little different for breakfast today from my usual egg whites and cream of rice. I've been eye balling this recipe for weeks now! It caught my eye because of the BACON, and how EASY it looked! And it is still relatively "clean", and doesn't sway to far from my normal eating plan.
I chose to make mine with 2 egg whites, instead of just one whole egg (keep in mind, they will take a little longer to bake).

My room mate and I inhaled them quicker than you can say B n 'E. They totally hit the spot. And I score room mate of the year points for making a killer Sunday breakfast.
